Sunday Eggs Benedict

Sundays are for eggs & bacon right? We went and stayed with a friend last night and took some of our ‘home grown’ eggs so of course we added some bacon and fresh rolls for breakfast this morning. To me this also calls for hollandaise sauce – just to make it truly indulgent!  I used a recipe from the Thermomix recipe community but adapted slightly – original here.

  • 130g butter
  • 4 egg yolks
  • 3 tsp vinegar/lemon juice
  • Salt & pepper to taste

Melt the butter for 3min 60 degrees speed 1. Add the rest of the ingredients and the butterfly and cook 8min 80 degrees speed 4. If you want it thicker then increase temperature to 90 degrees and cut it back a minute. Sorry non-Thermomix cooks – I’m sure this could be converted to a saucepan though.  We spooned over freshly poached eggs that I just drop gently into almost boiling water. Let cook 2-3 min and spoon out gently.  Yum 🙂  eggs_benny

My friend added some fresh avocado, lemon juice and Greek yoghurt.
